Petro Bar & Bistro will offer bar service only for in-house patrons consumption in their guestrooms from 4:00 p.m. -10:00 p.m. We will, for the short term, make prepared foods available for sale in the display case in the market including microwave meals appropriate for breakfast, lunch or dinner.

Neely Bryan

Named after John Neely Bryan, who established a permanent settlement in 1841 that later became Dallas, our play on a Manhattan uses both Dry Vermouth and Amaro with sweetness added by Maraschino Liquor.

Come Indulge In Texas Wine

Texas is one of the wine world's best kept secrets, and Texas wine precedes California wine by nearly a century. Upon establishing the Mexican missions in 1682, the Franciscans brought with them grapes that would begin over three centuries of Texas viniculture.

Modern Texas wine culture saw a revival in the late 1960s, when two researchers, Bob Reed and Clinton "Doc" McPherson, planted a few vines simply out of curiosity. Once they realized they'd rediscovered one of the foundations of modern-day Texas, the wine revolution in the Lone-Star state began.

Today, Texas Hill Country is proudly the second most visited wine tourist destination in the US behind Napa Valley; come discover what all the hype is about!

Try Our Texas Wine Flight

Los Pinos Rosato

silky smooth dry Rosé wine with a unique blend of 50% Dolcetto, 25% Tempranillo and 25% Cabernet Sauvignon grapes grown in the Texas High Plains. This light and refreshing crisp medley of fruit offers dominant flavors of rose petals, strawberries, grapefruit, blood orange, pomegranate, cranberries and finishes soft on the palate.

Brennan ‘Lily’ Roussanne

Medium bodied white wine with fruit flavors of apricot, nectarines, honeydew melon, and meyer lemons. 50% Roussanne- Reddy Vineyards and 50% Malvasia Bianca - Farmhouse Vineyards, Texas High Plains.

McPherson Piquepoul Blanc

Also known as Picpoul and Picpoul de Pinet in southern France, this unusual white variety produces a wine with excellent acidity thus its nickname of “lip stinger.” Fermented and aged in stainless steel to highlight the grape’s lime, lemon and green apple aromas and flavors.

THP Tempranillo

blend of 80% Tempranillo and 20% Tannat is composed entirely of grapes sourced from the Texas High Plains AVA, fermented as separate parcels and blended to achieve a balanced and complex wine. This terroir driven wine is highly perfumed with complex spicy nose of baking spices, tobacco leaf, red berries, with aromas of toasty oak rounding things out. This wine is full bodied with vibrant acidity and firm tannins.

McPherson Cinsault

Cinsault is well suited to warmer climates, drier soils and lots of sun; which sums up “terroir” as it is found in West Texas. A native to Southern France, Cinsault is used to make character rich rosés and nice, flirtatious reds. Usually found in blends, the red wines made from Cinsault are soft, fruity and aromatic in youth and can be long lived. McPherson Cellars chose to produce an unoaked red with just enough inherent tannin structure to show some strength.

Messina Hof ‘GSM’

Grenache, Syrah and Mourvèdre blend that is a medium-bodied wine leaves the palate with a blended synergy of rich flavors like blackberry, dark cherry, and plum with a hint of spice.
